Fall For It: Pumpkin Meatloaf

Tired of pumpkin spice lattes? (Yeah, we said it.) If you’ve fallen into a predictable pumpkin rut, it might be time to switch up your routine. We have just the recipe.

Ready for this? Pumpkin. Meatloaf.

It’s a unique twist on a classic, one you have to try to believe. Topped with pumpkin BBQ sauce, this dish is seasonal and savory at the same time. Trust us, pumpkin meatloaf has never seen the inside of a school cafeteria. And best of all, it’s super easy to make.

Here’s what you’ve gotta do:

First, preheat your oven to 400°. Next, in a large bowl, combine the ground beef, bread crumbs, eggs, canned pumpkin and spices. Mix everything together using your hands. Really mash it around in the bowl, squeezing and kneading all of the ingredients thoroughly. Then, take this mixture and form it inside two standard size loaf pans (make sure you spray the pans first!). Bake for 60 minutes, or until the inside reaches 160°.

While your meatloaf cooks, you can whip up the pumpkin BBQ sauce. Just put all of your ingredients into a saucepan, heat it on medium and stir. When the sauce is warm and thick, it’s ready to serve!

Pumpkin Meatloaf with Pumpkin BBQ Sauce

Meatloaf:

–       4 lbs. of ground beef

–       4 ounces of bread crumbs (throw 3 slices of bread in the food processor)

–       1 cup of canned pumpkin

–       2 eggs

–       1 tsp. of kosher salt

–       1 tsp. of cinnamon

–       1 tsp. of chili powder

–       1 clove of garlic

–       ½ tsp. of smoked paprika (optional)

Pumpkin BBQ Sauce:

–       2 cups of ketchup

–       1 cup of canned pumpkin

–       1/4 cup of water

–       2 tbsp. of apple cinder vinegar

–       1/4 cup of brown sugar

–       2 tsp. of cinnamon

–       1 tsp. of chili powder

–       1 tsp. of garlic powder

–       1 tsp. of smoked paprika (optional)

Directions:

–       Mix ground beef, bread crumbs, eggs, canned pumpkin and spices in a large bowl.

–       Form the mixture inside two standard size loaf pans.

–       Bake both loaves for 60 minutes at 400°.

–       While the meatloaf cooks, combine ketchup, pumpkin, apple cider vinegar, brown sugar and spices into a saucepan. Heat and stir until warm.

–       Drizzle pumpkin BBQ sauce over meatloaf and serve!
